1.Austrian Apple Pie

                 Ingredients                                                      Quantity

                       

            Apple wedges           –   3nos

            Butter                           – 66gms

            Corn starch             –    16gms

            Sugar                  –   100gms

            Cinnamon powder         –  33gms

             Lemon juice        – 1 no’s

            Raisins dark           –   15gm

                       

            Pie Dough:

            Flour            –  150gm                                                

            butter          -100gm

            Icing sugar       –  50gm                                                                          

                                   

            Method:

           

  • Arrange small five pie mould
  • Slice apple wedges, 100gm sugar mix and 60gm of Butter onto each pie shell.
  • Brush the edge side around of the pie dough with the egg wash mixture and cover with rolled of fresh pie dough.
  • Bake at 200c for 18 minutes.

 

2. French Almond Berry cake

 

Portion 6

Ingredients                                                      Quantity

Almond powder     – 225gm

Flour            – 25gm

Butter               –  225gm

Icing sugar              –  225gm

Egg                                 -4nos

Cinnamon powder        –   15gm

Method:

  • Preheat oven to 200c with rack in middle.
  • Grease and flour a small cake pan.
  • With electric mixer on low speed, blend almond flour, sugar and butter.
  • Continue mixing, adding eggs one at a time.
  • Mix on high until batter is light and fluffy, about 3 minutes.
  • Sift in the almond powder & flour.
  • Gently fold into batter until just blended.
  • Spread batter evenly into mould
  • Bake 20 to 25minutes

 

3. Dark & white cheese brownie

 

Portion: 6

Ingredients                                                      Quantity

 

Butter                                                              150gms

Chocolate                                                        150grms

Sugar                                                              200gm

Egg                                                                 3nos

Flour                                                               100gm

Cheese base

Cream cheese                                                 250gm

Egg white                                                        1nos

Egg yolk                                                          1 nos

Corn flour                                                       12gm

Milk                                                                 14ml

Cream fresh                                                    45gms

 

METHOD:

 

  • Chop the cashew nut and place them aside.
  • Melt the butter and the chocolate over a double boiler.
  • Whip the eggs, sugar and vanilla sugar until very peak.
  • Fold in the cold chocolate and butter mixture.
  • Last fold in the sifted flour with the baking powder and the chopped dates.
  • Sprinkle the chopped cashew nut on top of the mixture.
  • Make cheese mixture above recipe pour in top of brownie
  • Spread the mixture into a baking pan 40 x 30 cm and bake for 30 – 4- minutes at 180C`

 

 

4. 5 spice baked cheese cake

 

Cheese base

Cream cheese                                                 250gm

Egg white                                                        1nos

Egg yolk                                                          1 no’s

Corn flour                                                       12gm

Milk                                                                 14ml

Cream fresh                                                    45gms

Five spice                                                        8gm

 

Method

  • Cream the cream cheese, sugar, add the corn starch add the sour cream allow to the mix until well creamed.
  • Add the eggs & allow to incorporate , finally add the heavy cream and vanilla extract mixing well
  • Pour the mixture into a greased round cake moulds and sprinkle five spice powder on top.
  • Bake in a water bath a 180c for 60 minutes
  • Cool and de mould

 

5.The Opera    

 

Ingredients                                          Units    

              

Almond sponge

Icing sugar          –     75 gms

Flour                  -2 ½ tablespoons          

Almond powder         -75 gms

Eggs      –   3

Unsalted butter, melted and cooled     15 grams

Egg whites         –  3

Caster sugar            -1 tablespoon

Ganache

Dark chocolate, finely chopped        –  200 grams

Milk                  – 120 ml

Cream              – 110 ml

Unsalted butter, softened)         –   50 grams

Coffee syrup

Sugar       –   1 ½ tablespoons

Instant coffee     – 1 ½ tablespoons

Water        -90 ml

Butter cream

Caster (superfine) sugar     – 70 grams

Egg white         –  1

Instant coffee        – 1 tablespoon

Unsalted butter, softened  –  100 g

 

Method

  • Mix the butter and sugar in heavy duty machine until fluffy
  • Then add the egg yolk.
  • Mix all the dry ingredients the butter and egg mixer
  • Beat the egg white and sugar until fluffy
  • Fold thee egg whites Ina butter and dry ingredients mixture and mix together.
  • And bake in moderate oven at 200 degree centigrade.
  • Make the sponge like Swiss roll, keep cool
  • Before layering the cake soak with rum and coffee flavored syrup.
  • Layering the cake, bottom layer ganache, middle layer coffee cream and top layer cover with chocolate ganache.
  • Give the cake final finishing with use lines on tops.
  • Cut the cake garnish as how chef recommend.

 

 

6.CINNAMON CARROT CAKE

 

Ingredients                                       Quantity

 

Light sugar                        –  175g

Sunflower oil                  –    175ml

Eggs, lightly beaten            –    3 large

Grated carrots                  –   140g

Raisins                       – 100g

Orange Zest           –  1 large grated

Self-raising flour           –   175g

Baking powder            –   1 tsp

Ground cinnamon   –             1 tsp

Grated nutmeg                –  ½ tsp

 

METHOD

  • Swift flour, baking powder, baking soda, salt and cinnamon powder, and reserve.
  • Combine carrots and walnuts, reserve.
  • Whisk whole egg on high speed for 3 min, stop the mixer and oil and sugar whisk, on medium speed for 2 min
  • Add the reserved mixtures of the dry ingredients, whip on low speed for 1 min and 2 min on medium sped
  • Add the carrots and walnuts, and mix on medium speed for 2 min
  • Divide the batter into 4 ea paper lined sheet tray, and bake at 375 f’ 35 –40 min, or until the inserted tooth pick comes out clean
  • Keep the carrot cake room temperature until cool.
  • Make the frosting and apply on top of the carrot cake looks rough finishing.
  • Cut the carrot cake 10x10and sprinkle pistachio powder on top of the frosting.(sprinkle pistachio use strainer)

 

 

7 .Mix fruit Crumble Cake

 

Ingredients                                                                  Units                                        

Sweet paste

Sugar icing                    –      100gm                                                                    

Butter                                 -200gm                                                      

Flour                                   –   300gm                                                            

Eggs                                    –  1 each                                                          

Vanilla essence              –      5ml

Method:

  • Mix the butter and the icing sugar together, add the eggs one by one, add the flour, and vanilla         don’t over mix    

Streusel

Butter                    – 100gms

Sugar                         –  100gm                                                          

Flour                           – 120gm                                                              

Lemon zests               –   2 ea.                                                      

Vanilla essence          –    10ml                                                  

Cinnamon powder        –  10gm

Method:

  • mix butter and sugar together until creamy , add flour , lemon vanilla and cinnamon                                  

Filling

Butter   melted          – 60gm                                                                                  

Sugar   free        –  100gm

Mix fruit                –   500gm

Dark raisins             -20gm

Cinnamon powder        –   10gm

Cake crumb’s       – 100gm  

Method

  • Cook fruits butter and along with cinnamon powder mixture
  • Add the cake crumbs ,cinnamon powder, raisin
  • Line the sheet pan with the pan liner and a base of sweet paste and pre-bake
  • Place the cherry mixture on top of the pre-baked sweet paste and top it with streusel
  • Bake at 350’f.                                

Method

  • Role the sweet dough paste to the sheet tray and place it in the inside of the trey as a base
  • Spread the mixture of cheery filling on the top of the sweet paste evenly
  • Put the Streusel on top and bake at 200 c

 

8 Vanilla & chocolate marble cake

 

Ingredients                                                 Units      

Portion:6            

 

Flour        –     200grms

Butter           -200grms

Sugar            –  190grms

Vanilla Extract        –  5ml    

Baking powder                 -2gm

Egg whole                        -6nos

Chocolate                        –  50gm

Orange rind                     – 2gm

Lemon rind                        – 2gm

 

Method.

 

  • Mix butter and sugar in a mixing bowl until fluffy.
  • Then slowly add eggs.
  • Then add the flour, finally add cocoa powder or ganache and mix well.
  • Make a marble effect with using tooth pick
  • Then divide the mixture in to a greased mould and bake in a moderate oven.
  • After baking de mould and leave the cake at room temperature..
