Black Forest Mousse

Black forest mousse- A mouthwatering dessert based on the rich Black forest theme. The chocolate mousse layered with black cherries, whipping cream and topped with chocolate shavings, this dessert will pull away your kids crowd in any parties and get together.

For the chocolate mousse
 60 g Dark chocolate
 220 g Heavy cream
 40 g Granulated sugar
 1 Egg
 1 Egg yolk
 1 tsp Gelatin
 1 tbsp Water
 1 cup Whipped cream (for layering)
 ½ cup Chocolate shavings
For the cherry compote
 200 g Dark cherry
 50 g Sugar
 1 tsp Lemon juice
 ½ cup Water
 1 tbsp Corn starch
 1 tsp Vanilla essence

For making cherry compote- Place pitted cherry, lemon juice, water, sugar, corn starch in a sauce pan , mix well and cook in slow flame. Add vanilla essence. when the cherries are cooked and the syrup coated over, remove from fire and cool it.

For the mousse-
put the sugar and water in a pan and simmer till it forms the soft ball stage of syrup.
Mean while beat egg and egg yolk fluffy. whisk in the sugar syrup.
Soak the gelatin in little warm water.
Melt the chocolate.
Beat the cream with the sugar till peak forms.

Once the egg mixture is cool, add gelatin, chocolate and mix gently. Fold in the whipped heavy cream and keep in the refrigerator for 30 minutes.

Use a glass bowl for assembling the mousse. Arrange the cherry compote, chocolate mousse and whipped cream in layers and topped with shaved chocolate and garnish with cherries. Serve chilled.
