Parmesan yogurt Prawns salad- Succulent blanched prawns mixed with assorted lettuce, tomato, olives and tossed in a hearty Parmesan yogurt dressing is a treat to palate. Simple and humble, the prawn salad will be an addition to your parties, special dinners and people will love it.  400 g Prawns
 100 g Romaine lettuce
 100 g Iceberg lettuce
 100 g Red leaf lettuce
 100 g Tomatoes
 50 g Black olives
For the Parmesan yogurt dressing
 1 cup Yogurt
 2 tsp Grated Parmesan
 1 tsp Chopped garlic
 1 tsp Lemon juice
 1 tsp Chopped chives
 2 tbsp Cream
 Salt and pepper

Shell, de-vein the prawns, wash and drain. Heat water to blanch the prawns, add salt and little lemon juice. Put prawns in the boiling water, quickly blanch and remove, strain and keep it in chilled water.
Wash and cut the lettuce into chunks, tomatoes into wedges and slice the olives.

Whisk all the ingredients for the dip, check seasoning and mix with the prawns and other vegetables.
Serve chilled.
