Salad Nicoise or Nicoise salad- a classic salad from the city of Nice,France. There were arguments always about the ingredients which used but as on Mediterranean coast the City of Nice has some nice and healthy recipes to offer. Fresh tomatoes, potatoes, green beans and canned tuna with hard boiled eggs, tossed in a refreshing lemon dressing, this salad is a classic. Easy to prepare, healthy and refreshing for palate and eyes, Salad Nicoise is an all time favorite among the westerners.

 150 g Baby potatoes
 125 g Ripe tomatoes
 100 g Green beans(haricot verde)
 200 g Canned tuna
 100 g Black olives
 4 Eggs
For dressing
 2 tbsp Lemon juice
 2 tbsp Olive oil
 1 tsp Chopped garlic
 1 tsp Dijon mustard
 1 tsp Chopped parsley
 Salt and black pepper powder

Wash and cut the potatoes into half and boil in salted water.
Blanch the green beans , drain and soak in iced water.
Hard boil the eggs, drain,cool it, remove the shell and cut into quarters.
Strain the caned tuna and keep
Wash and cut the tomatoes into quarters.

For the dressing, mix all the ingredients together into an emulsion.

Toss all the vegetables and olives with this dressing and top with hard boiled eggs, crumbled tuna and chopped parsley
