Thai green papaya salad- Its believed that Som Tam is originated in the North Eastern region of Thailand and get popularized in the market areas of Bangkok. It can easily find in any Thai eateries and its a simple and refreshing salad. The crunchiness of raw papaya, spiciness of hot chilli. sweetness of peanuts and the refreshing taste of lemon juice all will end up in one of the best salads on earth.

 500 g Raw papaya
 1 cup Beansprouts
 1 tbsp Garlic chopped
 3 Red chilli
 50 g Green beans
 50 g Cherry tomatoes
 2 tsp Lemon juice
 2 tbsp Fish sauce
 3 tbsp Peanuts roasted and crushed
 2 Spring onion
 ½ tsp Palm sugar
 2 tbsp Oil
 3 Thai basil

Peel the papaya, remove the seeds and shred into fine julienne. Sting the beans and slice thinly. Cut the cherry tomatoes into quarters. Slice the scallions and basil thinly.

For the dressing-
Crush half the chillies, chop garlic and mix together with oil, palm sugar, fish sauce, basil and combine well.

Take all vegetables into a bowl, drizzle with the dressing, toss well, add peanuts and toss again.
serve immediately as chilled garnished with basil and peanuts.
