South western salad- South western region of United States of America possess a tropical climate and the cuisine has a rich and diverse nature with the abundant use of corn, beans, chillies, avacado etc. This is a filling salad with loaded nutrients such as proteins and vitamins. It can be made with or without chicken and here am sharing a recipe of vegetarian version of South western salad.
Black beans, american corn, lettuce, fresh tomatoes, and avacado tossed with cilantro lime dressing is very refreshing and nutritious for any events.

Ingredients
 ½ cup Black beans
 1 cup American corn
 2 Avacado
 1 cup Cherry tomato
 1 Red bell pepper
 1 Romain lettuce
 2 Spring onion
 2 tbsp Grated Cheddar cheese
For Cilantro lime dressing
 ½ cup Chopped coriander
 1 tbsp Chopped garlic
 ¼ cup Olive oil
 1 tbsp White wine vinegar
 ¼ tsp Cumin powder
 2 tbsp Lemon juice
 Salt and pepper to taste
Method-

Soak the black beans over night, cook with salt and drain. chill it.
Cut the cherry tomatoes into halves, bell peppers into dices.
Cut the Romain lettuce into chunks. Slice the spring onion.
Peel and dice the avacado.

Blend everything together for the dressing and keep aside.

Mix beans, corn, cherry tomato, spring onion and lettuce in a bowl . Toss with the dressing and transfer to a bowl.Top with diced avacado and grated cheese.. Serve chilled.
