Shakshuka- It is a classic egg dish from Middle east and North Africa. Eggs poached over a spiced sauce of onion and tomatoes. Shakshuka , literally means a 'mixture'. Its have bold flavors and taste and very filling. People love to have this dish for breakfast mainly or in other meal times. Once you had this and certainly you ay be a fan of the dish and love to make it again and again and obviously to drool it.
Peel and dice onions, dice the red pepper.
Blanch the tomatoes, peel it and squeeze out and seeds and juice. Strain the juice and discard the seeds. Roughly chop the tomatoes.
Heat oil in a pan, saute garlic, onion, red bell peppers. Add the tomato puree, chopped tomatoes and juice to it. Add paprika, chilli powder, cumin, salt and pepper.
Saute well, add half cup vegetable stock, simmer gently. Add chopped coriander.
Make small well in the sauce and break the eggs slowly into that. Cover and cook gently in slow fire for 7-8 minutes until the eggs are cooked.
Remove from the fire , garnish with chopped parsley and serve along with your favorite breads.
