BBQ Chicken- An all time favorite among the continent. Chicken rubbed with spices , grilled and basted with a sweet and spicy barbecue sauce is an easy go party food.
Clean, wash and cut the chicken into 12 pieces.
Marinate with rest of the ingredients and keep refrigerated for 3-4 hours.
Heat the grill, apply oil in the rack and place the chicken on top of it. cook on a medium heat, turning on both side and cook till it almost done.
Meanwhile, heat oil, saute onion and garlic, add the spices and tomato ketchup. Add half cup of stock and simmer the sauce. Check the seasoning and remove from the fire.
Bast ( apply the sauce over the chicken with a brush)the chicken with the prepared barbecue sauce and grill both sides again till it tender. Remove from the grill and serve with left over barbecue sauce.
