Texas style Beef and bean chili- Similar to Chili con carne, this earthy stew is delicious and flavorful. As the State of Texas is the homeland of American cowboys, the ranch culture and cuisine has prevailed in this region. Influenced by the neighboring country Mexico and its inhabitants who crosses the border for job and better prospects , the cuisine has enriched with meat, beans, corn and tomatoes. This stew is a complete meal which can goes with any bread or tortillas.

Wash the kidney beans and soak over night. wash again and cook with adequate water till the beans are cooked well. Remove and drain.
Blanch the tomatoes, peel and cut into dices.
Slice the jalapeno chillies.

Heat little oil in a pot, add the minced beef and cubed beef, fry well till brown in color. add the chopped onion and garlic and saute well,add half of jalapenos.
Add all the spices and saute well.
Add the blanched tomato dices into it along with tomato paste. Season it and pour one cup of stock , cover the pot with a lid and cook on a slow flame till it done.

Once the beef has cooked well and the stew has thickened slightly, remove from the fire and portion it to individual bowls.
Top with grated cheese, sliced jalapenos and chopped spring onions
