Shrikhand is a famous Indian dessert which is very popular in Western India especially in the states of Gujarat and Maharashtra. Its quite easy to make and delicious too. Basically strained yogurt mix with powdered sugar and flavored with cardamom will result into this delicacy. Garnish with almonds and pistachios makes this cool dessert heavenly. It was commonly found in the traditional Thali meals and also a common sweet dish in all the weddings.
Shrikhand is a cool and refreshing sweet dish especially in the scorching summer season. Arid areas of western states treat this chilled dessert to cool their body and palate after an elaborate meal. Shrikhand and lassi are a common streetfood in all these states as people depend these cool dishes to chill their body from the heat.
I had a first love on this delicacy. Very creamy and rich sweetened yogurt will pamper your tummy , for sure.

Strain the curd through a muslin cloth and remove the water contents completely. Better way to strain is, pour the curd into the muslin cloth, tie like a bundle and hang it somewhere until all water drips out. Squeeze out for a more thicker yogurt.

Mix the saffron in 1tsp hot water and keep aside.
Mix the strained curd with powdered sugar and beat well to mix nicely. add the saffron water with the strands and mix well. Pour into a bowl.

Slice the almonds and pistachios. Garnish the Shrikhand with the nuts and refrigerate for nearly 15 min or until well chilled.
Serve chilled after the meal.
