Banoffe pudding is taken from the classic recipe of Banoffee pie from England. Basically made with bananas, cream and thick caramel sauce , this dessert is heavenly. Twisted to the pudding version, the Banoffe pudding is no where linear than it's parent pie, but its more delectable and awesome.

Peel and cut the banana. Blend it along with maple syrup and strain through a sieve and keep aside.
Beat the eggs with sugar and vanilla essence and mix with pureed banana.

For the caramel cream-
Mix together the milk, sugar, baking soda in a sauce pan and boil. Lower the flame and cook the mixture gently , keeping stirred to avoid burning for nearly one to one and half hour until it caramelizes and thicken to the desired level. Add vanilla essence, mix well and keep aside.

Boil the cream. Make sure it just boiled . remove from the fire and pour slowly the hot cream into the banana mixture, whisk nicely to incorporate everything well.

Spread the caramel cream in the bottom of a baking dish, Pour the banana cream mixture over it.
Place the dish in a larger tray filled with water (just to the half height of dish) , Place the pudding dish inside the water and bake it in a pre heated oven for nearly one to one and half hour or until it become firm.
Remove cool to room temperature and refrigerate.

Slice the banana,
Heat a frying pan, melt the butter, add the banana and maple syrup, fry gently till the banana starts caramelizes. Remove from fire, cool it and arrange it over the pudding.
Serve chilled.
