Carrot Payasam- Payasams are the divine dessert of God's own country. There were endless variety of Payasam available in this land and it is an inevitable part in any Kerala meals. it can be made with any fruits or many of the vegetables which is available in season. Here Carrot payasam is one another simple preparation which grated carrot is cooked with milk, sugar, cardamom powder and dry fruits and it is very exotic. Carrot imparts many of its nutrients value to the dish and it is one of the dessert which is good for health and palate.
Peel and grate the carrots.
Heat ghee in a sauce pan, fry the raisins and cashew nuts and remove.
In the same ghee, saute the carrots for a while
Pour the milk to the sauce pan and boil it on a slow flame.
Simmer gently till the carrots cooked and milk has reduced. Keep on stirring to avoid burning.
Add sugar and mix well. Add condensed milk and mix well on low flame.
Remove from fire when the payasam has become slight thicker. Add the fried cashew nuts and raisin.
serve hot.
