Farrouj Meshwi- A simple and flavorful roasted or grilled chicken popular through out Arab nations and basically from Lebanon. Whole split chicken marinated with garlic, sumac, lemon juice and spices, either charcoal grilled or oven roasted to perfection is a best dinner recipe for your formal parties and get togethers. Usual accompaniments which can serve with this chicken dish are Pita bread and pickled vegetables with Taoum- Lebanese garlic sauce. As Middle Eastern cuisine emphasizes much on roast and grill meats with assorted vegetables and dip, this dish can be made easier and your guests may appreciate it with full heart.

For Toum (Garlic sauce)

Peel the garlic, squeeze the lemon juice, blend together all the spices, oil and salt.
Clean the chicken . Split the chicken into two length wise with skin. Prick with the knife over the flesh to make some incursions.

Marinate the chicken with the marinade and keep aside for half an hour.

Grill the chicken over a open flame or roast it in a pre heated oven of 180 degree celcius for 20-25 min or until done.
Serve hot with Pita bread , pickled vegetables and Toum- garlic sauce.

For Garlic sauce- Blend together garlic, oil, lemon juice and salt to a creamy consistency.
