Pahadi chicken curry- Its a traditional chicken curry from the Northern hills of India. As the word 'Pahadi' means mountain, and the dish is an ethnic treat of the region. Chicken cooked with fresh spices and yogurt , yet simple and delicious.

Clean and cut the chicken into small pieces. Wash well and strain. Marinate with little salt, turmeric powder, little yellow chilli poder and keep aside.
Peel onions and slice.
Heat mustard oil to a smoking point, reduce flame, again heat it.add cloves, pepper corn, coriander seeds, fennel, peeled ginger and garlic- saute . add chopped onion and fry well, remove from fire, cool it and ground to a fine paste

Heat the left over oil, fry the green and black cardamom, cinnamon stick, green chilli slit and add turmeric, yellow chilli powder , saute and add the prepared ground masala and fry well.
Fry the chicken pieces in little mustard oil and add to the gravy. Add yogurt and simmer on a low flame

Add milk, add handful of chopped coriander and cook till the chicken had done. Remove from fire, sprinkle with chopped coriander leaves , cooked spinach leaves(opt)and serve hot with any Indian breads or rice.
