Moroccan Charmoula Prawns- Charmoula sauce or marinade is one of the popular condiment in Morocco. Meat or seafood is marinated with this spice, grilled to perfection is something delectable. It is made up of blending garlic, cumin, chillies, coriander leaves and balance with fine virgin olive oil makes it the heart of Moroccan cuisine. Crossing the borders even to other North African countries and Western world Chermoula attained a million hearts as one of the best condiment to grilled seafood, meats or even with vegetables
Clean , shell the prawns, de-vein it , wash and drain.
Chop the coriander and wash, Peel the garlic and chop.
Peel the onions and dice, wash the tomatoes and dice.
For the marinade- Blend all the ingredients into a coarse paste.
Marinate the prawns with this marinade and keep aside for 30 minutes
Heat a skillet, pour olive il and grill the prawns both side and remove.
Heat oil in a pan, saute s onions and tomatoes, add the grilled prawns, toss well, add the chopped coriander and seasoning. Remove from the fire
Serve hot , garnished with lemon and coriander.
