Prawns alla diavolo is a hearty Prawn dish from the Mediterranean coast of Italy. Pan seared prawns simmered in a fiery and full flavored tomato sauce with herbs and wine is a treat to the palates. Serving with garlic tossed spaghetti pasta will be very much appreciated in your tables.

Tomatoes, garlic and fresh herbs plays a vital role in any Italian recipes. varied and very much rich in its own regional cuisines, italian is considered as one of the top five cuisines in the world.
I remember my early days in the hotel as a chef, where I works as a job trainee in The Oberoi, Bangalore. I had got a chance to work very close with one Italian chef who flown down from Naples for a one week Italian fest. So many easy to make , and new dishes were in the every day dinner buffet at the Coffee shop. Its all new learning, the art of handmade pizzas, varieties of pastas, main courses, the tricks and intricacies of the Italian cuisine etc etc all made me quite confident to explore more.
Here I am presenting one of the fascinating shellfish recipe, which everyone can have a toss.
Clean, slit cut the back of the prawns and remove the vein, wash and marinate with lemon juice, slat and pepper.
Chop finely the onions and garlic.
Blanch the tomatoes in hot water, drain,peel and roughly chop it.
Add little olive oil in a pan, ad seer the prawns quickly and remove. Keep aside.
In the same pan, add rest of the oil, chopped garlic and onion and saute without changing the color. Add white wine and reduce to half.
Add the tomato paste and saute, add the chopped tomatoes, chilli flakes, oregano, salt and pepper and saute.
Add the panfried prawns to the sauce, simmer in a low flame, add chopped parsley, check the seasoning and remove from fire.
Garnish with lemon, olives and serve hot with tossed Spaghetti or garlic bread.
