Kerala Egg roast- A simple and all time favorite dish among the Keralites. Whether it with Kerala paratha , Chapathi, Idiyappam or Ari pathiri , the Egg roast will be an excellent combination. Preparing with easy ingredients which will be alwys available in any kitchens, this recipe will bring cheers to the table.

Boil the eggs for twelve minutes, remove from fire and drain under cold water. Shell it and keep aside.
Peel onions and slice, slice tomatoes, peel and slice ginger, slit green chillies.

Heat oil in a pan, splutter mustard seeds and curry leaves. Fry the ginger and green chilli and add sliced onions. Saute till the onions turn brown.
Add turmeric, coriander and chilli powder, saute for a while and add tomatoes. Fry well till the masala has combined well.

Add garam masala, fennel powder and salt. fry well.
Add the hard boiled eggs and stir fry well till the eggs and masala is combined well and the gravy is thick.
remove from fire and serve hot with any breads.
