Tom kha Gai- Thai style chicken soup is so popular all over the world. Very refreshing soup with chicken, coconut milk and flavored with galangal and lemon grass with a tinge of lemon is always a treat to palate. In Thai language the word 'Tom"refers to boiling broth and "kha" meant to galangal and "gai" means chicken. So by seeing the name itself we can understand what are the ingredients goes into it by remembering these terminology.
Tom Kha Gai demonstrates the intricacy in Asian cooking by balancing different flavors to a delectable one and make people to crave for it.

Peel and slice shallots. Remove the hard leaves of lemon grass and crush along with peeled galangal and kaffir lime leaves.
Slice the mushrooms.
Clean and slice the chicken breast.

Heat little oil, saute shallots, crushed lemongrass galangal lime leaf mixture, curry paste and add chicken stock, simmer to infuse the flavor and strain it.
Return to boil. Add blanched mushrooms and chicken.
Add fish sauce, brown sugar, salt and pepper.

Add coconut milk slowly and heat it. Be careful at this stage that there will be a chance to split the coconut milk, mix nicely.
Add lime juice and chopped coriander ,balance the taste and remove from the fire.
Serve hot garnished with chopped coriander and lime slice.
