Eggs stew- Eggs, a rich source of proteins, vitamins and zinc which is readily available in almost all houses of Kerala. Hen rearing was a passion for household ladies since ancient times. As eggs and chicken were not available in market as of now in olden days, the need of eggs and meat is satisfied by rearing them only. Everyone should take one egg a day to meet their essential nutrients needs. Eggs carries good cholesterol which help the heart health, boosts brain functioning and sharpen your eye sights.
Here its a uncommon dish, Egg stew. Hard boiled eggs simmered in a mildly spiced coconut gravy will be good companion to Appam.

Hard boil the eggs for ten minutes in hot water. Remove, drain and peel the shell, keep aside.
Peel the onions and slice. Peel the ginger and slice
Slit the green chilli.

Heat coconut oil, put bay leaf, broken cardamom and curry leaves. add sliced onions, green chilli and ginger and saute without color changing.

Pour the coconut milk, gently heat, add salt and pepper.
Place the boiled eggs and simmer for a while. Sprinkle the cardamom powder.
Remove from fire.

Serve hot with Appam.
