Fish Livornese- A delicate fish dish from the Port city of Livorno in Tuscany region. Any flaky fish fillets can be used to make this dish. Fish smoothered in a flavorful tomato sauce with olives. capers, garlic and chilli flakes. The Tuscany region is blessed with good climate, natural resources, fresh produce and delectable seafood. The food is very unique with abundant use of fresh tomatoes, garlic and olives. As Italian food in general uses very few ingredients to make complex flavors the region of Tuscany contributed well into that with their ethnic cooking and style. Their seafood stews were very famous through out the country.

Trim and cut the fish into small steaks or slice it. Marinate with little olive oil, little garlic, lemon juice, salt and pepper.
Blanch the tomatoes, peel it, crush and remove the seeds. coarsely chop it.

Heat olive oil, sear the fish both sides and remove.
In the same oil saute garlic, capers, olives, tomato puree and pour in the white wine and reduce little bit.
Bring back the fish to the sauce and allow to absorb the wine into that, add crushed tomatoes, parsley, chilli flakes, salt and pepper and gently mix it.

Allow the fish to cook gently with the sauce and thickening it into a rich tomato sauce. Check the seasoning and arrange in a plate.
Serve with fresh boiled vegetables.
