Shell, de-vein the prawns, wash and drain. Heat water to blanch the prawns, add salt and little lemon juice. Put prawns in the boiling water, quickly blanch and remove, strain and keep it in chilled water.
Wash and cut the lettuce into chunks, tomatoes into wedges and slice the olives.
Whisk all the ingredients for the dip, check seasoning and mix with the prawns and other vegetables.
Serve chilled.
